The retort sterilizes by bathing the product with hot-water spray, through top and side spray nozzles. The water is heated by a heat exchanger, fed by steam in a closed circuit.

Steam processing is more efficient and requires less come-up time than hot-water processing, and is recommended for delicate containers. Hot-water spray is best for products that are heat-sensitive and can also pasteurize at temperatures below 100°C.
